Oh and I am not just talking about the organization, although that is nice too. I am talking about the amount of food. Good thing this is at my Mom's and I know we are always welcome. :)

I'm impressed! I'm good at buying food storage, but not using. It always just goes bad then I have to throw it away and start all over. Can I get an A for effort, though? Your mom definitely gets an A+++!
